Anchovy butter (for sandwiches)

Ingredients

→ SALT
→ 50 G SMALL PICKLED CUCUMBERS (GHERKINS)
→ 50 G CAPERS
→ 5 HARD-BOILED EGG YOLKS
→ 250 G SOFTENED BUTTER
→ 200 G RED HOT PEPPER POD
→ 150 G OF ANCHOVIES
→ 120 G OF 3% VINEGAR

Grind the chopped capers, gherkins, anchovies and yolks and rub them through a sieve.

In a saucepan, put the softened butter, add the mashed anchovy mixture and beat out with a spatula.

Then add finely chopped hot pepper, vinegar, salt and again beat everything well.

Anchovy oil is served with cold dishes of meat, poultry, and game, and is also used for canapes and decoration of dishes.
