The finished grains of this lentil really resemble beluga caviar – round, black, shiny.

Beluga was bred in Canada, but now it is also grown in the United States and Southeast Asia.
It cooks quite quickly – only 20 minutes, and it is best used for making salads, stews and soups. (Do not soak the beluga before cooking.)
