Bird nests of herring

Ingredients

→ HAM WITHOUT FAT OR SALTY TONGUE
→ 60 G ONION
→ 60 G GREEN SALAD
→ 6 HARD-BOILED EGGS
→ 450 G BONELESS FILLET OF SALTED HERRING
→ 30 G TRUFFLES
→ 150 G OF FRESH CUCUMBERS

Clean the herring, select the bones, turn the fillet through a meat grinder (see "Cutting fish", "Processing salted herring"). After forming the resulting mass in the form of half a ball, place it in a salad bowl or on a plate covered with green lettuce leaves.

The surface of the mass is thickly sprinkled with a mixture of chopped egg white with finely chopped truffles (or ham without fat, or boiled salted tongue). Surround the mass at the base with a border of fresh cucumber circles. In the center of the mass, make a small depression and put a whole boiled egg yolk there.
