Cascabel Chili Pepper"

This Mexican pepper is almost never sold fresh. Its burning intensity ranges from low to medium.

After drying, the round pepper "cascabel" becomes like a translucent cherry of brown color. The seeds rattle inside the fruit, which is why this pepper is called "cascabel", which means "tambourine" in Spanish.

This pepper in dried form is used in marinades, sauces and soups. When toasted, it gets a rich nutty taste.

In general, "cascabel" is characterized as spicy (with the taste of smoking), very aromatic and slightly sour.
