Chestnut honey: useful properties of chestnut honey
Chestnut honey is obtained from the nectar of chestnut flowers and honeydew of edible chestnut trees. The color of chestnut honey varies from amber to red-brown or intense brown. The aroma of chestnut honey is rich, tart, with a hint of bitterness; the taste is pronounced, stable, with a slight bitterness (due to the high content of tannins), sometimes softened by the admixture of clover nectar and white acacia.
The consistency of chestnut honey is mainly viscous: due to the limited glucose content, it slowly crystallizes.
In cooking, chestnut honey is used mainly for filling toast and for caramelizing walnuts (they are combined with goat cheese, poultry liver, roast).
