Chili pepper " New Mexico"

The young New Mexico pepper from the chili family has a light green pod, which turns medium green when ripe, and then a rich red.

Externally, this pepper is similar to "Anaheim" - they are often confused because of the approximately identical size. However, the green "New Mexico" is less stinging (the sting ranges from medium to high, depending on the variety) and more aromatic.

As a rule, this pepper is added to stews, hot sauces, salsas and stuffed dishes.
