Features of the Austrian national cuisine: Vorarlberg
The land of Vorarlberg is located in the very West of Austria. Local cuisine ("landle") was formed here under the influence of Swabia and Algoya, and if we talk about cheese, we can not dispute the influence of Swiss traditions.
Especially delicious spicy cheeses: mountain cheese "of walsertal" and cheese "Rescate". These cheeses can be considered among the national dishes of Vorarlberg, since they are used to prepare the famous cheese sticks ("kazspatzle") and cheese balls ("kazknepfle").
