Fresh fish cutlets

Ingredients

→ SALT
→ GROUND BLACK PEPPER
→ WATER OR MILK
→ 50-75 G STALE WHITE BREAD
→ 400-600 G OF FRESH FISH
→ 2 TABLESPOONS VEGETABLE OIL
→ 2 TABLESPOONS BREADCRUMBS

Cut the fish (see "Cutting fish"), remove all the bones and skin, and pass the pulp through a meat grinder. Then add the stale white bread, previously soaked in cold boiled water or milk, salt, pepper, mix all this and pass it through a meat grinder a second time.

From the prepared fish mass, cut the cutlets, roll them in breadcrumbs (see "White breadcrumbs"), put them in a preheated frying pan with oil and fry on both sides until a golden crust is formed. Then cover the pan with the cutlets and fry for another 5-7 minutes or put in the oven.

Cutlets can be served with fried or boiled potatoes, porridge, pasta, stewed cabbage, fresh cucumbers and tomatoes, as well as with vinaigrette and green salad.
