Juice from mountain ash berries

The juice of the chokeberry is obtained from the berries by pressing. It has a dark red color and a sour-sweet (in some cases sour-bitter) astringent taste.

To prepare the juice, you need to take the selected fruits of the chokeberry, free them from the twigs, rinse thoroughly under a stream of cold water, then transfer to a saucepan, add drinking water (1 kg of berries accounts for 1/2 liter of water) and put on a slow fire. With regular stirring, warm them up well (the berries should be hot, but not boil) (the recommended temperature is 90 degrees) and keep at this temperature until softened. After that, loosen the fire twice and squeeze out the juice with a wooden pusher. Next, filter the juice, heat it again to 90 degrees, and then pour it into a hot, sterilized container and immediately close the boiled lid.

Canned juice of mountain ash should be stored in the refrigerator, at a temperature of 3-5 degrees. It is important to keep in mind that if stored incorrectly, it is fermented and becomes unusable!
