Juice or nectar from hawthorn fruit

Juice or nectar from hawthorn can be obtained at home.

Hawthorn juice (without adding water, without pulp, for canning)

The fruits of the hawthorn are sorted, thoroughly washed and crushed with a home vegetable cutter or meat grinder. Then, the crushed hawthorn pulp is loaded into the juicer, without subjecting it to preheating, into the receiver for raw materials. The receiver for the raw material should be placed on the juice collector, which in turn should be placed on the steamer pan. Pour water into the steam generator. Cover the juicer with a lid and put it on the fire. When the water boils, the steam enters the receiver for the raw material, passes through the layer of crushed fruits and, condensing, flows into the juice collector. As the collection is filled, the juice must be drained. The juice extraction process lasts 50-55 minutes. The juice can be preserved in its pure form or blended with more acidic juices, such as black currant, cranberry, barberry, and Antonovka apples (see the articles "Black Currant juice", "Apple Juice"). The resulting juice is filtered through a layer of gauze, heated to 100°C, boiled for 3-4 minutes, and then immediately poured into warmed clean jars. Pasteurize the juice in cans at 85-90 degrees: half-liter cans — 15 minutes, liter-20 minutes.

Hawthorn nectar (with water, with pulp, for canning)

For 1 kg of hawthorn, 50 g of sugar and 1 liter of water are necessary. Peeled and washed hawthorn fruits are cooked in a small amount of water (200-400 ml per 1 kg of fruit) on low heat until completely softened. Rub the boiled mass through a fine sieve, add water and sugar to the resulting puree. Bring the mixture to a boil. After that, pour it into washed, sterilized jars and pasteurize at 95 degrees: half-liter cans — 20 minutes, liter cans-30 minutes.

Hawthorn nectar (with the addition of water, for fresh consumption) (juice therapy)

To prepare fresh nectar from hawthorn, ripe fruits should be washed, dried and passed through a juicer. The juice is very thick, like a plum! Therefore, it is recommended to dilute it with spring (or at least well-filtered) water, after which it can be consumed fresh in 100 ml 3-4 times a day (in accordance with the course of treatment). Ready-made juice from hawthorn fruits has a rich taste with a long cinnamon-honey aftertaste.
