Mackerel salad with dried apricots

Ingredients

→ GROUND BLACK PEPPER
→ SALT
→ 50 G GINGER
→ 3 TABLESPOONS LEMON JUICE
→ 2/3 CUP SOUR CREAM (15% FAT CONTENT)
→ 2 SPRIGS OF PARSLEY (FOR DECORATION)
→ 100G ASPARAGUS
→ 1 CUP DRIED APRICOTS
→ 1 FRESH MACKEREL

To prepare a mackerel salad with dried apricots, wash the boneless mackerel fillet thoroughly and dry it (see "Cutting fish" and "Features of cooking boiled fish"). Transfer the fillet to an enameled pan, add salt, peeled and grated ginger root, pour in water and boil until tender. Remove the fish from the broth, cool and cut into small pieces. Sprinkle the pieces with lemon juice and set aside.

Wash and boil the asparagus in the fish broth until soft, then cool and finely chop. Dried apricots are also finely chopped.

Mix the mackerel fillet, asparagus and dried apricots and season with sour cream, salt and ground black pepper. Transfer the mackerel salad with dried apricots to a salad bowl and garnish with parsley sprigs.
