Medium-grain rice

Medium-grain rice has a wider and shorter grain than long-grain rice. This type of rice is grown mainly in Spain, Italy, the United States and Australia.

Medium-grain rice contains a lot of starch and therefore has a matte color.

Before cooking, medium-grain and round-grain rice is washed so that it does not stick together during cooking.

During cooking, medium-sized rice absorbs a large amount of liquid and becomes soft, and in the finished dish, its grains stick together a little.

Medium-grain rice is especially appreciated for its ability to absorb the flavor of other ingredients in the dish, so it is often used for paella, risotto and soups.

The most popular varieties of medium-grain rice: "Carnaroli", "Arborio", "Valencia", "callous", "Venus" (black). Iberica rice and red Thai rice are also known.
