1. If you are roasting meat in the oven, put a small pot of cold boiled water in it. The resulting steam protects the meat from drying out. 2. When the meat is fried in the oven, it can be poured on top only with the released meat juice or hot boiled water. Cold boiled water will make the meat tough!
