Note #18: "About aspic"

Piglet, walleye, large sterlet, bream fillet, carp is more convenient to pour in a deep dish. On the cake sheets (iron sheets) with sides or baking sheets, sturgeon, beluga, tongue and other products are poured, which after cooling are transferred to the dish. Poultry, game, vegetables, ruff and perch fillets are best served in salad bowls or in various forms.
