Note #49: "About roasted walnuts"

1. Fried walnuts get an unpleasant taste, so they are not suitable for sprinkling products that require a long stay in the oven. 2. At the same time, walnuts intended for cakes and pastries are recommended to be calcined before eating (but not fried!). To do this, they must be kept in the oven at a temperature of 75 degrees for 20 minutes (no more!). It is believed that this improves their taste.
