Plum oil (oil from plum seeds)
The seeds of the plum are poisonous. It contains 30-42% of fatty oil, which is used on a par with almond oil; flavonoids - quercetin, avicularin, isoquercitrin; amino acids - piperidine and others; the enzyme emulsifier; glycoside amygdalin, which, getting into the intestine, decomposes there to form toxic prussic acid.
However, the oil obtained from plum seeds is used for both cosmetic and culinary purposes. It is especially appreciated by those who like to experiment in the kitchen. After all, you can use it to give familiar dishes a new taste! Plum oil has the aroma of bitter almonds with fruit and marzipan shades. It is used as a dressing for various cold and hot dishes (including fish dishes and sushi), as well as in the preparation of baked goods and sweet desserts. In addition, it is perfectly suitable for frying.
