Podosinovik: useful properties of podosinoviki

After the white aspen (red riding hood, red mushroom, krasnik, krasnogolovik) in terms of food characteristics, it takes the second place among all tubular mushrooms. In addition, it is the earliest and fastest growing mushroom with an unusual color. In young aspen beetles, the cap is hemispherical, with age it becomes convex or cushion-shaped. Depending on the place of growth, the color of the cap varies from gray, white-pink and orange to bright and yellow-red. The leg of the aspen is thickened, white, with oblong white, brown or black scales. The flesh is white, strong, on the cut first turns pink, and then turns blue or even black. The smell is not pronounced.

In cooking, aspen mushrooms are used for frying, marinating, salting, drying (dried aspen mushrooms make excellent gravies and caviar), stewing, cooking soups (they are rarely prepared because of the blue of the mushroom, which gives the soup a dark color).

Mycologists distinguish several main types of aspen: yellow-brown, orange-yellow, white, red.

Yellow-brown aspen is found in dry mixed forests (especially birch trees), sometimes under the leaves of a fern. The time of growth of mushrooms is from June to the end of September. The cap of this mushroom is convex, with a skin hanging down on the edge, the color of the skin is yellow, orange or yellow-brown. The leg is decorated with black scales. When dried, the pulp turns black. 

Orange-yellow aspen is a mushroom of deciduous, mixed and pine forests, growing singly and in "flocks". The cap of the mushroom is 4-12 cm in diameter, in appearance in young mushrooms it is hemispherical, but over time it loses its convexity. The stem is cylindrical, white, covered with white scales at the base. The flesh is dense, showing a purple or gray-black hue at the break. The mushroom picking period lasts from June to early October.

White aspen (the rarest type listed in the Red Book) grows mainly in pine and deciduous forests, as well as shady aspen forests. The cap is fleshy, and can reach 25 cm in diameter. The color of the hat is white, gray or dirty gray-brown. The stem is high, thickened downwards, white, with oblong white or brown scales. The flesh on the fracture turns blue and as a result turns black or dark purple. The ripening period of mushrooms is June-August.


Red aspen is often found by mushroom pickers in the forest zone under young trees, and it can also be found in the mountains and taiga. This mushroom also grows in groups in clearings and near forest paths.

The cap of the red aspen is large, fleshy, sometimes 30 cm in diameter. Its color is dark or brick-red, it feels velvety, pleasant. The stem is high, thickened downwards, white, dotted with brownish or brown scales. The flesh of the mushroom turns blue and black. The fruiting time of the mycelium is June-the end of September.
