Potato salad with herring

Ingredients

→ SALT
→ WATER
→ 4 BOILED POTATOES
→ 20 G PARSLEY
→ 2 TABLESPOONS SOUR CREAM (15% FAT CONTENT)
→ 2 TABLESPOONS VEGETABLE OIL
→ 2 TABLESPOONS LEMON JUICE
→ 1 RAW EGG
→ 1 TABLESPOON WHEAT FLOUR
→ 1 SALTED HERRING
→ 1 ONION
→ 0.5 TSP SUGAR
→ 0.5 TEASPOONS GROUND RED HOT PEPPER

Soak the herring 1-1. 5 hours in cold boiled water, then cut it into boneless fillets (see "Processing salted herring" and "Cutting fish"). Cut the fillet into short thin strips.

Boil the potatoes in the "uniform" until tender, cool, peel and cut into strips. Peel and finely chop the onion. Wash the parsley with warm water, shake it off and chop it finely.

Preparation of the sauce. Mix the flour with vegetable oil and egg until a thick mush is obtained. After that, gradually add 0.5-0.75 cups of cold boiled water, while stirring constantly, so that no lumps form. Bring the mixture to a boil. Then add sour cream, lemon juice, sugar, salt, red hot pepper, stir, boil for another 1-2 minutes and remove from heat.

Mix the onion, herring and potatoes with half the sauce and transfer to a salad bowl. Top the salad with the remaining sauce and garnish with parsley.
