Sauce "Of Mayonnaise"

Ingredients

→ VINEGAR TO TASTE
→ SALT
→ 100 G OLIVE OIL
→ 1/4 TEASPOON MUSTARD
→ 1 RAW EGG YOLK

Beat the egg yolk into an enameled, porcelain or earthenware dish, add the mustard, mix with a spatula and gradually pour in small portions of olive oil, stirring continuously. When the butter and yolk form a homogeneous thick mass, add fine salt and dilute the mass with vinegar to the density of liquid sour cream.

This sauce is served with various meat and fish dishes and serves as a dressing for various salads.
