Viburnum fruit juice

To make viburnum juice, wash the berries in cold water, dry them and squeeze out the juice. At the same time, it is important to try not to put too much pressure on the skins of berries, since they contain the main bitterness.

The resulting juice should be mixed with sugar in a ratio of 1:1. After that, pour it into sterilized jars, close the boiled lids and store in a cool place. (As the juice is stored, the bitterness in it disappears.)

You can also prepare viburnum in its own juice: for this, the viburnum fruits are placed in glass jars at 1/3 of the volume and covered to the top with sugar. Banks should be stored with a loosely covered lid in a cool place, after six months, viburnum in its own juice is ready.

In cooking, viburnum juice is most often tinted with drinks. In addition, it is used to prepare kissels and fruit drinks (see also the article "Viburnum").
