Regional cuisine of Germany: marinated roast in the Rhenish style

Among the national German dishes, the most frequently mentioned is the marinated roast in the Rhenish style. Marinated roast in the Rhenish style is a stew of marinated beef (in former times, horse meat was used instead of beef) with the addition of a piquant flavorful sauce, which usually contains raisins.
Cooking takes quite a long time. Beef three days before stewing is put in a marinade made from vinegar, wine, celery root, parsley, carrots and spices. Also, cloves and juniper berries are added to the meat, which give the roast a unique sweet and sour taste. As a classic side dish, dumplings with Apple mousse, French fries or red cabbage are served.
