Pistachio nuts

Pistachios are sold most often with a cracked shell. These nuts have a light green color, so they are used to decorate cakes, pastries, cookies and sweets. The hard nut shell is removed with a penknife. The shell of the pistachio kernel is removed in the same way as that of almonds, but the heating duration should be less. After cleaning, you must immediately dry the nut, otherwise it will sour and lose its glossiness and green color.
